Steam cauliflower over medium heat until very tender and allow to cool slightly. Meanwhile, add oil to skillet and sauté onion and garlic over very low heat for 5‒6 minutes or until quite brown. In high speed blender, puree cooked and drained cauliflower, sautéed garlic and onion, milk, nutritional yeast, mustard, salt, and white pepper. Blend until smooth sauce forms. Stop and use a tamper stick as needed. Pour into saucepan and heat thoroughly over low heat. Add vegan butter at this point if desired. Cook fettuccine according to package instructions and drain. Return to pan and stir in sauce, reheating as necessary. Garnish with chopped parsley and black pepper. Makes 4‒6 servings.
